Vietnamese Shrimp and Greens Soup

Serves 2 generously as a main course
Ingredients
1 tablespoon Canola or other neutral oil
1/2 yellow onion, sliced
5 cups of water
Fine sea salt
2 tablespoons fish sauce, plus more as needed
1 bunch hearty greens like mustard or kale or broccoli rabe, coarsely chopped
12 large shrimp
1 tablespoon finely chopped peeled ginger
Ground black pepper (lots of it)
Directions
In a saucepan over medium heat, warm the canola oil. When the oil is barely shimmering, add the onion and cook for about 4 minutes, stirring, until soft and sweetly fragrant.
Add the water, ½ teaspoon salt, and fish sauce, then turn the heat to medium-high and bring to a boil. Continue the boil for 5 minutes.
Add the greens and cook for 5 minutes. Then add the shrimp and ginger and cook for two minutes or until pink.
Remove from the heat and let rest for 5 to 10 minutes. Add more fish sauce and salt to taste.
Serve with freshly ground black pepper

Going with the 37% rate means you’re likely going to be covered for the tax bill but more shares will be sold to cover taxes.
